Step 1: Preheat oven to 400 degrees F.
Step 2: Line a baking sheet with parchment paper, then add a wire rack so your chicken will crisp up all over. I spray my rack with a cooking oil to prevent sticking.
Step 3: Put the cornflakes into a sealable bag and crush into small bits.
Step 4: Add the ranch seasoning and parmesan cheese to the bag and mix thoroughly.
Step 5: Melt the butter in a small pan, or in the microwave.
Step 6: Pound the chicken breasts so they are about 1/4" thick.
Step 7: Dip each chicken breast into the melted butter, coating both sides.
Step 8: Add each chicken breast to the cornflake mixture in the bag and shake to completely coat both sides.
Step 9: Put the chicken onto the wire rack.
Step 10: Repeat for each chicken breast.
Step 11: Bake for 20 to 25 minutes - or until the chicken reaches an internal temperature of 165 degrees F.
