Step by Step Method

Step 1

Preheat the oven to 425°.

Step 2

Wash the potatoes. Do not peel.

Step 3

Slice the potatoes into 1/4 inch slices.

Step 4

Combine all ingredients in a bowl, tossing them together to mix well. Press the breadcrumbs to the potatoes so they adhere.

Step 5

Line a baking pan with foil, and spray with cooking spray.

Step 6

Spread the potatoes out in a single layer on the baking pan. Press any loose breadcrumbs onto the potatoes. Bake at 425° for 24 minutes, or until crisp on the outside and tender inside. Enjoy!

These crispy potatoes were so delicious and easy to prepare...I loved that it served 2 hungry people...of course the hubby asked for ketchup...I loved them as is...I served them with pork schnitzel and corn...for a wonderful meal...made for your week #13 football win...

These were quite good. I served them for dinner with baked lemon-pepper chicken breasts, and it was a great meal. Some of the panko fell off the potatoes as I transferred them from the baking sheet. But I just scooped up the topping and distributed it on top of the serving platter, and everyone thought it was how the potatoes were supposed to be served. So all was well on that front. But the potatoes were very good and had a crispy edge with a soft center. And it's such an easy recipe to prepare! Thanks, breezermom!
