  • 12 ounces potatoes (medium red potatoes)
  • 2 teaspoons olive oil
  • 1/4 teaspoon salt
  • 1/4 cup Panko breadcrumbs (Italian)
  • Black pepper, dash

How to Make

  • Step 1: Preheat the oven to 425°.

  • Step 2: Wash the potatoes. Do not peel.

  • Step 3: Slice the potatoes into 1/4 inch slices.

  • Step 4: Combine all ingredients in a bowl, tossing them together to mix well. Press the breadcrumbs to the potatoes so they adhere.

  • Step 5: Line a baking pan with foil, and spray with cooking spray.

  • Step 6: Spread the potatoes out in a single layer on the baking pan. Press any loose breadcrumbs onto the potatoes. Bake at 425° for 24 minutes, or until crisp on the outside and tender inside. Enjoy!
