"This is something that my Mom used to make for me growing up; however, I am pretty sure that she used spaghetti back then. Now, I have switched to orzo vs spaghetti; and parmesan vs cheddar. But, it is absolutely delicious and easy to prepare. The reserved pasta water with the cheese creates a creamy sauce, without adding any cream or butter. Five (5) simple ingredients and 15 minutes. Six, if you want to add a little Italian seasoning, which is optional. A wonderful easy side dish."

Step by Step Method
Step 1
Zucchini and Onion ... Add the olive oil to a small saute pan, and bring to medium-medium high heat. Then, add the zucchini and onion; and, saute until tender, about 5 minutes. Season with the Italian seasoning (optional); and, salt and pepper during cooking. You want the zucchini and onion very tender and soft.
Step 2
Orzo ... As the zucchini and onion cook, start the pasta. Cook the pasta according to package directions, in plenty of salted water.
Step 3
Once the pasta is done, drain; but, reserve 1 cup of the water. This will be added to the pasta to create a creamy sauce.
Step 4
Finish ... Add the zucchini and onion mix, parmesan cheese, and a bit of the reserved water; then, toss to combine. Season with salt and pepper. Then, add a bit more water if necessary. Stir until creamy - and the consistency you like.
Step 5
If you want ... garnish with a bit more parmesan.

Serve and ENJOY!
