"The holiday are ahead & it's the best time to discover new taste sensations as recipe sites give us special ways to add to our holiday meal-plans. Realsimpledotcom does that for me year-rd, but lately more than usual. This tasty appy relies solely on cheese & veggies as ingredients plus an easy-fix prep in your microwave. RS had this to say (edited slightly by me): "Think of this as creamy corn-packed queso - Warm, cheesy & begging for chips ... Diced pimiento is mild in flavor & adds a sweet pepper taste, but if a spicier appy is desired, try using diced jalapeno." It's a fast-fix appy & can also be served w/breakfast-to-dinner meals that include quesadillas, burritos & tacos, for example. You can even split the recipe & offer this veggie-based version w/a "meat lovers" version by adding grd beef or bacon. Black beans or olives would also be a good adds. There are so many options & they all lead to -- ENJOY!"

Stir together corn, Pepper Jack cheese, mayo & diced pimiento in a med-size microwave-safe bowl. Microwave on MED (50% power), stirring every 1 1/2 min, until cheese is melted & dip is hot, about 5 min. Top w/chopped scallions.
