  • 8 ounces pepper Jack cheese (shredded, about 2 cups)
  • 1/2 cup mayonnaise
  • 1 jar (4 ounce) diced pimiento (drained
  • 2 scallions, chopped

How to Make

  • Step 1: Stir together corn, Pepper Jack cheese, mayo & diced pimiento in a med-size microwave-safe bowl. Microwave on MED (50% power), stirring every 1 1/2 min, until cheese is melted & dip is hot, about 5 min. Top w/chopped scallions.

  • TO SERVE: Serve w/tortilla chips, carrot sticks, bell pepper slices, celery sticks, etc.
