"This is an easy chicken dish that can be ready in 45 minutes or less, depending on the chicken pieces you choose. This dish works well using low fat evaporated milk. *NOTE* Adjust baking times for boneless chicken breasts to prevent drying out. The heat can be adjusted to your taste, adding more or less chili powder or chipotle chilies. I go light on the salt, but please adjust that to your taste as well. Serve this dish with Mexican rice and steamed vegetables or refried beans."

Step by Step Method

Step 1

Preheat oven to 375 degrees.

Step 2

Place the chicken pieces in a roasting pan. Brush with melted butter, using it all. Season with salt, pepper, chili powder and onion powder to taste. Bake for 15 minutes.

Step 3

Turn chicken over and cover loosely with foil. Bake until chicken is no longer pink in center, about 20 minutes longer.

Step 4

Meanwhile, in a blender, mix the chipotle chiles and adobo, the evaporated milk and the flour. Melt the butter in a medium saucepan. Add the blended mixture and cook over low heat, stirring constantly. Bring to a boil.Season with salt. Remove from heat once the sauce has thickened.

Step 5

Remove chicken from oven and let rest 5 minutes covered with the foil.

Step 6

Serve chicken pieces covered in sauce. Garnish with cilantro, if desired.

Full of flavor! This dish is packed with flavor and not difficult to make. Chipotle peppers enhance the creamy sauce. I thought the sauce was perfect, Sweetie thought it should be a little thicker. It is a sauce not a gravy. If you prefer a thicker sauce simply add a bit more flour. I'm anxious to try the sauce on grilled chicken. Well done Mami!!!
