Ingredients

The ingredients are:
  • 4 chicken breasts (bone-in or boneless breasts or thighs or drumsticks)
  • 2 tablespoons butter, melted
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon chili powder, to taste
  • 1/2 teaspoon onion powder, to taste
  • 2 to 3 chipotle chiles (canned in adobo)
  • 1 teaspoon adobo sauce, from the chipotle can
  • 1 can (12 ounce) evaporated milk
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon salt
  • 4 cilantro sprigs, to garnish

How to Make

  • Step 1: Preheat oven to 375 degrees.

  • Step 2: Place the chicken pieces in a roasting pan. Brush with melted butter, using it all. Season with salt, pepper, chili powder and onion powder to taste. Bake for 15 minutes.

  • Step 3: Turn chicken over and cover loosely with foil. Bake until chicken is no longer pink in center, about 20 minutes longer.

  • Step 4: Meanwhile, in a blender, mix the chipotle chiles and adobo, the evaporated milk and the flour. Melt the butter in a medium saucepan. Add the blended mixture and cook over low heat, stirring constantly. Bring to a boil.Season with salt. Remove from heat once the sauce has thickened.

  • Step 5: Remove chicken from oven and let rest 5 minutes covered with the foil.

  • Step 6: Serve chicken pieces covered in sauce. Garnish with cilantro, if desired.
