"This is an easy chicken dish that can be ready in 45 minutes or less, depending on the chicken pieces you choose. This dish works well using low fat evaporated milk. *NOTE* Adjust baking times for boneless chicken breasts to prevent drying out. The heat can be adjusted to your taste, adding more or less chili powder or chipotle chilies. I go light on the salt, but please adjust that to your taste as well. Serve this dish with Mexican rice and steamed vegetables or refried beans."

Q: How long do I need to bake the chicken?
A: The baking time will vary depending on the type of chicken pieces you choose. Bone-in chicken breasts or thighs should bake for 15 minutes, then an additional 20 minutes with foil loosely covering them. Boneless chicken breasts should bake for 15 minutes, then an additional 10-15 minutes with foil loosely covering them.
Q: How can I tell when the chicken is cooked?
A: The best way to tell when the chicken is cooked is to use a meat thermometer. Insert the thermometer into the thickest part of the chicken and it should read 165°F when the chicken is done.
