"I make this lovely belly warming soup often in the winter months. It is low calorie and perfect for after the holidays when you are trying to drop a few of those extra pounds. The taste is divine!!"

Step 1

Place all the ingredients in a heavy bottom pot and bring to a boil over medium-high heat.

Step 2

Reduce heat and simmer for a couple of hours.

Step 3

Remove the bay leaves and puree with an immersion blender. (If you do not have an immersion blender, puree this in batches in a blender. Do not use the blender cover or the heat will make this explode; cover the top with a towel and process the soup until pureed.)

Interesting and good soup. I didn't know what jarred ginger was so I used pickled ginger (sushi ginger) and not sure if that was correct but it added an interesting tang to the soup. I also used fresh chives instead of the dried. Good soup.
