Step 1: Place all the ingredients in a heavy bottom pot and bring to a boil over medium-high heat.
Step 2: Reduce heat and simmer for a couple of hours.
Step 3: Remove the bay leaves and puree with an immersion blender. (If you do not have an immersion blender, puree this in batches in a blender. Do not use the blender cover or the heat will make this explode; cover the top with a towel and process the soup until pureed.)
Step 4: Enjoy!
