Step by Step Method
Step 1
Bring water and oil to a boil using a small saucepan.
Step 2
Add couscous, stir, cover and remove from heat. Let stand for 5 minutes and then fluff with a fork. Set aside to cool.
Step 3
Place couscous in a medium bowl.
Step 4
Add chopped vegetables, olives, capers, parsley, salt and pepper, 1 tablespoon olive oil and balsamic vinegar.
Step 5
Use 2 forks to combine ingredients.
Step 6
Cover and refrigerate for several hours.
Step 7
This keeps well for 3 or 4 days in the refrigerator.
