Ingredients

The ingredients are:
  • 3/4 cup water
  • 1 tablespoon olive oil
  • 1/2 cup quick-cooking couscous
  • 1/4 cup cucumber, diced
  • 1/4 cup carrot, coarsely grated
  • 3 radishes (up to 4), finely chopped
  • 1 tablespoon red onion, finely chopped
  • 2 tablespoons green bell pepper, finely chopped
  • 1 small tomato, peeled, seeded, and chopped
  • 2 black olives (up to 3), chopped
  • 1 teaspoon capers
  • 1 tablespoon fresh Italian parsley, chopped
  • Salt and freshly ground pepper
  • 1 tablespoon olive oil
  • 2 teaspoons balsamic vinegar

How to Make

  • Step 1: Bring water and oil to a boil using a small saucepan.

  • Step 2: Add couscous, stir, cover and remove from heat. Let stand for 5 minutes and then fluff with a fork. Set aside to cool.

  • Step 3: Place couscous in a medium bowl.

  • Step 4: Add chopped vegetables, olives, capers, parsley, salt and pepper, 1 tablespoon olive oil and balsamic vinegar.

  • Step 5: Use 2 forks to combine ingredients.

  • Step 6: Cover and refrigerate for several hours.

  • Step 7: This keeps well for 3 or 4 days in the refrigerator.
