"Jennifer at bakeorbreakdotcom is 1 of my favorite bloggers. Most of her recipes are feasts for the eyes, taste sensations & easy-to-fix (a big bonus for home cooks like myself). But I occ favor a part of 1 of her recipes more than the whole. That happened recently when I saw this recipe (http://www.bakeorbreak.com/2014/10/apple-spice-cake-cinnamon-cream-cheese-frosting/) & fell in love w/the FROSTING! For the most part, I'm content to eat cake plain, lightly dusted w/powd sugar or lightly glazed. I rarely frost baked goods as I think it's "sugar overkill", but I'm ready to make an exception for this frosting. ENJOY!"

Step by Step Method
Step 1
Place the cream cheese & butter in a lrg bowl. Using an electric mixer on med speed, beat until combined & smooth. Gradually add the powdered sugar, mixing until smooth. Add the cinnamon & vanilla & mix well.
Step 2
NOTE: Jennifer agrees that LESS IS BEST as applied to frosting & says the frosting yield is enough to frost the top & center of a 2-layer cake, but not the sides. If you want to fully frost a 2-layer cake, she suggests using 1 1/2 times the ingredient amts shown above.
