Step by Step Method

TO MAKE THE SAUCE


Step 1

In a small bowl, whisk together soy sauce, sugar, cooking wine, oyster sauce, hoisin sauce, garlic, ginger, green onions, and sesame oil; set aside.

TO MAKE THE NOODLES & REST OF THE RECIPE


Step 2

Make the lo mein noodles by placing in boiling water. Cook according to package directions. Drain.

Step 3

Heat 2 tablespoons of oil in a wok or large skillet over medium high heat. Add onion and celery, and cook, stirring often, until tender, about 3-4 minutes, the onions will begin to become translucent. Stir in cabbage until heated through, about 1 minute.

Step 4

Add noodles, and 1/2 cup of prepared sauce, stir until well combined and the noodles are heated through, about 2 minutes. Serve immediately

Now before I start with this review ~ I must admit to taking a few liberties with this recipe by adding a few extra vegetables to the recipe. I added some fresh broccoli, spring onion and capsicum to the mix and substituted boc choy for cabbage I also used hokkien noodles, and garnished with chopped cashews. I followed the instructions as written and followed the sauce recipe exactly as it was written and WOW..... I loved this. As the rest of the family were having chicken for dinner. I decided to make this for myself... YES all for myself. I made double and wanted to use the leftovers for work and also for the next night's dinner. Well that was what I had planned, but everybody wanted some after their dinner and I was only just lucky enough to get a serve for dinner myself! Everybody raved about the sauce, it was absolutely wonderful. I used to buy noodles at this one noodle shop, I really loved them, but when they closed I could never get or make anything comparable to theirs, but this recipe is exactly the same.... actually I would say better! So simple and easy to make and just my perfect meal, and everyone else's in this family it seems! None left for work the next day & let alone my well laid plans for the next night! ;-) Thanks Jeff... you have helped me find an old favorite, that I will be making again and again!

I scaled back for 1 serve carefully measuring all the ingredients and it was way too much for me so I have left overs for lunch and certainly not complaining for it was absolutely delicious and think it will taste just as good cold as warm. I would suggest though the addition of some red capsicum or finely julienned carrot to add a bit of colour to the dish. Thank you ChefJeff made for Alphabet Soup tag game. UPDATE had the left overs cold for lunch and they tasted even better as the flavours had developed making it good for a potluck or the lunch box.
