"I just love Kittencal's fat-free bran muffin recipe, but I needed chocolate. So using hers as a base, I came up with this one. If you want a chocolate breakfast muffin, this is really moist and yummy. I keep these in the freezer, and heat in the microwave for about 20 seconds. "

Step by Step Method

Step 1

Preheat oven to 350 degrees.

Step 2

Combine wet ingredients in a medium-size bowl and stir in oat bran. Allow bran to soak for about 15 minutes.

Step 3

In a smaller bowl, combine dry ingredients including the chocolate chips.

Step 4

Using a rubber spatula or wooden spoon, stir dry ingredients into wet ingredients just until combined and all the dry ingredients are moistened.

Step 5

Spray a muffin tin with cooking spray (I use my silicone muffin pan for these) and spoon batter into 11 cups for larger muffins, or all 12 cups for slightly smaller ones.

Step 6

Bake for 21 minutes.

My kids love anything chocolate and when I saw these while looking through your recipes I made a mental note to make these. They are delicious and moist and delicious. I love that they are low in fat and my kids loved them too, which is always a plus. We will have these again!

Anything lower fat that taste good is a prize find, this happens to be one of those recipes, I didn't have yogurt so I subbed low-fat sour cream that worked out really well, this will be saved as a keeper I thank you for such a great low fat muffin recipe

Holy Cow these are really wonderful, and a plus is that they are healthy to! I chose this recipe to take to my good friend who just came out of the hospital, I didn't have Greek yogurt or skim milk I used regular yogurt and 2% milk, I'm making more this week to freeze, thank you for such a great healthy muffin recipe

I made these wonderful muffins early this morning but I used sugar in place of Splenda and 2% milk in place of the no-fat milk, I enjoyed two of them with my coffee, left out two for tomorrow and froze the rest, these baked out lovely, thank you for this great chocolate muffin recipe Manda!
