Chocolate Oat Bran Breakfast Muffins
"I just love Kittencal's fat-free bran muffin recipe, but I needed chocolate. So using hers as a base, I came up with this one. If you want a chocolate breakfast muffin, this is really moist and yummy. I keep these in the freezer, and heat in the microwave for about 20 seconds. "

Step by Step Method
Step 1
Preheat oven to 350 degrees.
Step 2
Combine wet ingredients in a medium-size bowl and stir in oat bran. Allow bran to soak for about 15 minutes.
Step 3
In a smaller bowl, combine dry ingredients including the chocolate chips.
Step 4
Using a rubber spatula or wooden spoon, stir dry ingredients into wet ingredients just until combined and all the dry ingredients are moistened.
Step 5
Spray a muffin tin with cooking spray (I use my silicone muffin pan for these) and spoon batter into 11 cups for larger muffins, or all 12 cups for slightly smaller ones.
Step 6
Bake for 21 minutes.
