Ingredients

The ingredients are:
  • 1 1/2 cups oat bran
  • 1 cup skim milk
  • 1/2 cup plain non-fat greek yogurt
  • 3/4 cup unsweetened applesauce
  • 1 large egg
  • 2 tablespoons honey
  • 1 1/2 teaspoons vanilla
  • 1/2 cup Splenda
  • 6 tablespoons dark cocoa powder
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons mini chocolate chips

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: Combine wet ingredients in a medium-size bowl and stir in oat bran. Allow bran to soak for about 15 minutes.

  • Step 3: In a smaller bowl, combine dry ingredients including the chocolate chips.

  • Step 4: Using a rubber spatula or wooden spoon, stir dry ingredients into wet ingredients just until combined and all the dry ingredients are moistened.

  • Step 5: Spray a muffin tin with cooking spray (I use my silicone muffin pan for these) and spoon batter into 11 cups for larger muffins, or all 12 cups for slightly smaller ones.

  • Step 6: Bake for 21 minutes.
