"My fondness for particular ingredients seems to run in spurts. Right now I'm into recipes using oats, corn flakes & AVOCADO. I was in the middle of a full-on avocado spurt when I stumbled over a series of recipes using it. This is the 2nd that I promised to share here at Zazz. - Found at FOOD52dotcom & credited to Gena Hamshaw who every other Thurs shares satisfying & flavorful recipes that also happen to be vegan on her blog Choosing Raw. She gives green soups their moment in the spotlight w/this refreshing & creamy soup that comes together w/a flip of the switch on your blender & was also a contest winner. Now we're not vegan, but we do love to entertain & I try to target light starter courses that are make-ahead & easily served. This recipe certainly meets those goals. This is a NO COOK recipe & 20 min was allowed for the ingredient & soup/salsa prep. Enjoy!"

Step by Step Method

Step 1

Blend all soup ingredients together in a blender till smooth, adding enough water to achieve a perfectly creamy texture (about a scant 1/2 half cup, but use your judgment).

Step 2

Toss the salsa ingredients together in a sml bowl.

Step 3

Transfer soup to 4 serving bowls, top each w/a half cup of the mango salsa & serve w/a wedge of fresh lime .. OR .. Store in a container & refrigerate for use the next day.

NOTE FROM ME & not a part of the recipe: My creative nature kicked in & it occurred to me that this would be ideal as a starter for a Tex-Mex meal. For that purpose, you could design another salsa - A combo of black beans & corn w/sml dice red onion, tomato & black olives sprinkled w/cilantro for example

  • Standard blender, but a hand-held blender would be my choice

Made this as an appetizer last night and DH want to know why I didn’t make more and just serve it for dinner. Cool, refreshing and just an overall delightful soup. Thanks for the wonderful post.
