"This salad is SO good and very refreshing. The dressing is fantastic! Note that the full amount of dressing is not meant to be used in this one recipe, therefore you may want to cut the amount of dressing down. In addition, the calorie amount is incorrect. The dressing can also be used on sandwiches, salads, topping for some soups, etc. as it makes for a great condiment."

Step by Step Method

Step 1

Slice tomatoes into medium sized slices.

Step 2

Slice mozzarella into medium sized slices (not too thin or too thick).

Step 3

Cut avocados in half lengthwise, remove and discard pits, slice diagonally into medium sized slices, trying to keep them as the same size as the tomatoes and mozzarella slices.

Step 4

Slice red onion very thinly sliced (if using).

Step 5

On medium sized plate or platter, arrange tomatoes, avocados, onions, and mozzarella, shingle style - filling the outer rim of plate and working your way into the middle. Fit in a basil leaf on top of the mozzarella slices.

Step 6

Lightly salt and sprinkle black pepper over the top to taste.

Step 7

Drizzle with Fresh Basil Dressing to taste. Note that all of the dressing is not meant to be used. Reserve remainder for other use. (Great on sandwiches, salads, topping for some soups, etc.).

Step 8

Decorate with more fresh basil leaves if desired.

Fresh Basil Dressing:.

Step 10

Blend the basil, oil, mayonnaise, vinegar, shallots or onions, salt and pepper in a blender or food processor until smooth. Refrigerate until ready to use.

NOTE: If serving this salad for company, you may want to slice the avocado at the last minute because it browns easily. To prevent this from happening too quickly, you may sprinkle the avocado with lemon juice. But it's just as easy slicing the avocado at the last minute and fitting it under the tomato slices

Just WOW. We have Caprese style salads all the time, but the basil dressing on this really puts it over the top. Loved the addition of the avocado, too! Such a pretty little salad! I didn't have any white balsamic, so used a good regular one, and wasn't bothered by how it looked at all. Sure, a lighter dressing would probably be more appealing and easier to distinguish from the basil leaves and avocado - so next time will try the white balsamic. Anyhow, Nat, this is a WONDERFUL salad, and one that we'll definitely be making again. I really liked Maito's suggestion to use the dressing as a dip for artichokes. Yum!

This salad is so darn tasty...but you really need to use the white balsamic vinegar...the dark one makes the basil dressing unattractive...the hardest part of the recipe is finding an avocado that's perfect...mine had some dark spots...I made this for Alphabet tag game...
