"I came up with this one evening when I had some andouille and Laughing Cow Chipotle cheese staring back at me from the fridge. It became an instant favorite and not super unhealthy. You can also sub chicken sausage for the andouille to keep it even lighter. Recipe is for 2."

Step by Step Method
Step 1
Preheat oven to 375 farenheit. Spray a small skillet with pan spray and add the andouille sausage. Warm over medium heat for 3-4 minutes, just enough to release the flavor. While andouille is warming, Using a meat mallet, flatten chicken until it is approximately 1/4 inch thick.
Step 2
To assemble - Place one wedge of cheese on chicken breast, top with andouille pieces and then a sprinkling of green onion. Fold over. Season with salt, pepper, onion powder, thyme and paprika.
Step 3
Heat one tablespoon oil over medium high heat in an oven proof skillet and carefully add chicken breast when the oil is hot. Brown chicken on both sides - approximately 4-5 minutes per side, and then place in the pre-heated oven and bake for 20 minutes.
