Ingredients

The ingredients are:
  • 2 boneless chicken breast
  • 1 (3-inch) section andouille or chicken sausage, very fine dice
  • Pan Spray:
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon thyme
  • 2 wedges Laughing Cow LIght Chipotle Cheese
  • 2 green onion, diced
  • 1 tablespoon olive oil

How to Make

  • Step 1: Preheat oven to 375 farenheit. Spray a small skillet with pan spray and add the andouille sausage. Warm over medium heat for 3-4 minutes, just enough to release the flavor. While andouille is warming, Using a meat mallet, flatten chicken until it is approximately 1/4 inch thick.

  • Step 2: To assemble - Place one wedge of cheese on chicken breast, top with andouille pieces and then a sprinkling of green onion. Fold over. Season with salt, pepper, onion powder, thyme and paprika.

  • Step 3: Heat one tablespoon oil over medium high heat in an oven proof skillet and carefully add chicken breast when the oil is hot. Brown chicken on both sides - approximately 4-5 minutes per side, and then place in the pre-heated oven and bake for 20 minutes.
