Step 1: Preheat oven to 375 farenheit. Spray a small skillet with pan spray and add the andouille sausage. Warm over medium heat for 3-4 minutes, just enough to release the flavor. While andouille is warming, Using a meat mallet, flatten chicken until it is approximately 1/4 inch thick.
Step 2: To assemble - Place one wedge of cheese on chicken breast, top with andouille pieces and then a sprinkling of green onion. Fold over. Season with salt, pepper, onion powder, thyme and paprika.
Step 3: Heat one tablespoon oil over medium high heat in an oven proof skillet and carefully add chicken breast when the oil is hot. Brown chicken on both sides - approximately 4-5 minutes per side, and then place in the pre-heated oven and bake for 20 minutes.
