Step by Step Method
Step 1
Soak and drain bulgur.
Step 2
In medium bowl, combine bulgur, apricots, raisins, parsley, scallions, orange juice, oil, oregano and salt, and mix well.
Step 3
Add tomato and yogurt and chicken or turkey; toss to mix.
Step 4
Cover and chill several hours.
