Step 1: Soak and drain bulgur.
Step 2: In medium bowl, combine bulgur, apricots, raisins, parsley, scallions, orange juice, oil, oregano and salt, and mix well.
Step 3: Add tomato and yogurt and chicken or turkey; toss to mix.
Step 4: Cover and chill several hours.
