Ingredients

The ingredients are:
  • 1/2 cup bulgur
  • 1/2 cup dried apricot halves, quartered
  • 1/4 cup raisins or dried cranberries
  • 1/3 cup snipped parsley
  • 1/4 cup sliced scallions
  • 1/4 cup orange juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1 large tomato, seeded and chopped
  • 1/3 cup plain yogurt
  • 8 oz cooked chicken or turkey breast, cut in strips

How to Make

  • Step 1: Soak and drain bulgur.

  • Step 2: In medium bowl, combine bulgur, apricots, raisins, parsley, scallions, orange juice, oil, oregano and salt, and mix well.

  • Step 3: Add tomato and yogurt and chicken or turkey; toss to mix.

  • Step 4: Cover and chill several hours.
