Step 1

Grease an oval ovenproof dish (8-cup capacity).

Step 2

Place only noodles in a saucepan of boiling water, reserving noodle sachet and boil for 2 minutes and then drain well.

Step 3

Spread noodles over base of prepared dish.

Step 4

Whisk eggs and milk in a large jug until combined and then add noodle sachets, onions, tomatoes and half the cheese and season with salt and pepper and mix well, before pouring over noodles in dish and then sprinkle remaining cheese over the top.

Step 5

Cook, uncovered, in a moderate oven (180C) for about 25 minutes, or until set.

Step 6

Remove and let stand for 5 minutes. and then serve warm frittata with tomato relish.
