"This chicken kofta is a great recipe for the summer months. Served with salad Lebanese bread or Pita bread, lettuce, yoghurt, hummus, dips (beetroot dip) or a tomato and cucumber salad. Turkey mince can be used ins place of chicken."

Step by Step Method
Step 1
If you are using wooden skewers you will want to soak them for an hour before you grill.
Step 2
In a bowl, add the chicken mince, onion, pepper flakes (if using) breadcrumbs, egg, parsley and seasoning and using your hands, thoroughly mix the ingredients.
Step 3
Shape chicken mix into 12 sausages and thread on to skewers.
Step 4
Place the skewers on a tray and refrigerate for 10-15 minutes.
Step 5
Oil a grill or a b.b.q. and cook the Kofta's on the grill plate or barbecue, uncovered for 12 minutes, or until cooked through, turning the Kofta's during cooking.
Step 6
Remove and serve ~ with pita/lebanese bread, baby cos, yoghurt, dips and or salad.
