Ingredients

The ingredients are:
  • 700 grams chicken mince
  • 1 large onion, grated or finely chopped
  • 1/4 teaspoon red pepper flakes {optional}
  • 1 1/2 cups fresh breadcrumbs
  • 1 egg, lightly beaten
  • 1/3 cup chopped parsley, finely chopped
  • 1 tablespoon moroccan seasoning/spice blend
  • 12 skewers, soaked in water, for an hour before you grill.

How to Make

  • Step 1: If you are using wooden skewers you will want to soak them for an hour before you grill.

  • Step 2: In a bowl, add the chicken mince, onion, pepper flakes (if using) breadcrumbs, egg, parsley and seasoning and using your hands, thoroughly mix the ingredients.

  • Step 3: Shape chicken mix into 12 sausages and thread on to skewers.

  • Step 4: Place the skewers on a tray and refrigerate for 10-15 minutes.

  • Step 5: Oil a grill or a b.b.q. and cook the Kofta's on the grill plate or barbecue, uncovered for 12 minutes, or until cooked through, turning the Kofta's during cooking.

  • Step 6: Remove and serve ~ with pita/lebanese bread, baby cos, yoghurt, dips and or salad.
