Step 1: If you are using wooden skewers you will want to soak them for an hour before you grill.
Step 2: In a bowl, add the chicken mince, onion, pepper flakes (if using) breadcrumbs, egg, parsley and seasoning and using your hands, thoroughly mix the ingredients.
Step 3: Shape chicken mix into 12 sausages and thread on to skewers.
Step 4: Place the skewers on a tray and refrigerate for 10-15 minutes.
Step 5: Oil a grill or a b.b.q. and cook the Kofta's on the grill plate or barbecue, uncovered for 12 minutes, or until cooked through, turning the Kofta's during cooking.
Step 6: Remove and serve ~ with pita/lebanese bread, baby cos, yoghurt, dips and or salad.
