"The first dish I ever served to guests and the response I got was so positive I've been making it ever since. Needless to say, it's a very simple recipe. I generally serve it with noodles. . One of the few chicken dishes I still make using bone-in, skin-on chicken parts. When feeding known garlic-lovers, I'll increase the garlic."

Step by Step Method

Step 1

Put butter, lemon juice, salt, garlic, pepper, paprika, mushrooms and capers in a skillet and bring to a boil over medium-high heat.

Step 2

Arrange the chicken in the skillet and bring to a boil again.

Step 3

Cover, lower heat and simmer about 30 minutes until the chicken is tender, turning several times.

Ten stars! This was a quick and easy main dish, but the flavors are amazingly good, as Teresa said. I cut the recipe in half, using just three bone-in chicken thighs, and 8 oz. of fresh mushrooms because its what I had in the fridge. Doubled the garlic, as is my habit - LOL. The sauce is to die for, and the half recipe made more than enough to put over the chicken and some rice. This one is surely going into my Best of 2023 file! Thanks for sharing!

I downsized the recipe for the two of us...I used boneless...skinless...chicken breast and fresh mushrooms...this turned out amazingly good...loved all the rich flavors...made for "Best of 2022" recommended by WhatamIgonnaeatnext?

Oh my goodness! This is way better than my cruddy Pic. There was a ton of sauce that we added to our potatoes. Simple, easy, and fun to eat. The chicken soaked up all those good flavors. I made this for What's on the Menu? on Food, Friends, and Fun.
