Step by Step Method

Step 1

Wet chicken and season to taste with salt and pepper.

Step 2

Roll in breadcrumbs and sauté in 4 tablespoons butter in skillet covered until cooked through.

Step 3

Remove cover and brown.

Step 4

Meanwhile, blanch spinach in boiling water for 1 minute and drain.

Step 5

Brown 2 tablespoons butter in another skillet season lightly, and sauté spinach until just tender.

Step 6

Remove chicken from pan and add 2 tablespoons butter.

Step 7

Add whole and minced mushrooms and season lightly, and sauté until light brown.

Step 8

Place spinach on platter.

Step 9

Arrange chicken breasts over spinach and cover with mushrooms.

Step 10

Drizzle butter remaining in pan over chicken.

Step 11

Garnish with whole mushrooms.
