Ingredients

The ingredients are:
  • 2 pounds whole chicken breasts, boned and split (2)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup dry breadcrumbs, fine
  • 1/2 cup butter
  • 2 pounds spinach, cleaned, stemmed
  • 1 cup mushrooms, minced
  • 1 cup mushrooms, whole
  • 2 tablespoons olive oil

How to Make

  • Step 1: Wet chicken and season to taste with salt and pepper.

  • Step 2: Roll in breadcrumbs and sauté in 4 tablespoons butter in skillet covered until cooked through.

  • Step 3: Remove cover and brown.

  • Step 4: Meanwhile, blanch spinach in boiling water for 1 minute and drain.

  • Step 5: Brown 2 tablespoons butter in another skillet season lightly, and sauté spinach until just tender.

  • Step 6: Remove chicken from pan and add 2 tablespoons butter.

  • Step 7: Add whole and minced mushrooms and season lightly, and sauté until light brown.

  • Step 8: Place spinach on platter.

  • Step 9: Arrange chicken breasts over spinach and cover with mushrooms.

  • Step 10: Drizzle butter remaining in pan over chicken.

  • Step 11: Garnish with whole mushrooms.
