Step 1
Prepare rice and set to the side to cool.
Step 2
Boil or poach the chicken breasts, and cube when cool enough
Step 3
Heat sesame oil in a large frying pan, add onions, garlic and frozen peas and carrots. Saute until tender.
Step 4
Add the eggs and break up while stirring to scramble them, add the rice, chicken and soy sauce.
Step 5
Stir mixture until it is hot.
Step 6
Add green onions for garnish if using.
Step 7
Remove from heat and serve!
