Ingredients

The ingredients are:
  • 3 cups cooked rice
  • 1/2 pound boneless skinless chicken breasts, cooked
  • 1 cup peas & carrots, frozen
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 3 tablespoons sesame oil
  • 1/4 cup soy sauce
  • 4 green onions sliced at angle, greens included (optional)

How to Make

  • Step 1: Prepare rice and set to the side to cool.

  • Step 2: Boil or poach the chicken breasts, and cube when cool enough

  • Step 3: Heat sesame oil in a large frying pan, add onions, garlic and frozen peas and carrots. Saute until tender.

  • Step 4: Add the eggs and break up while stirring to scramble them, add the rice, chicken and soy sauce.

  • Step 5: Stir mixture until it is hot.

  • Step 6: Add green onions for garnish if using.

  • Step 7: Remove from heat and serve!
