"I was just looking in my fridge etc and came up with this recipe. We quite enjoyed it so I decided to post it. Drumsticks here are frequently on sale at a really low price so this is a very economical recipe"
In a large zip lock bag combine the drumsticks, lime juice, cumin, cayenne, salt & pepper, 1/2 cup cilantro .
Shake well to combine and coat the chicken.
Place in fridge for 1- 3 hours.
Preheat oven to 375F.
Remove chicken from marinade and place on an oven proof tray.
Bake the chicken for apprx 25 minutes turning once - time depnds on the size of the drumsticks.
Rest for 5 minutes , sprinkle on remaining cilantro & serve.
