"From Australian BH&G Diabetic Living and their lunchbox special. Cooking time is pouring the hot water on the chicken mixture. Don't see why you couldn't sub turkey meat or ham for the chicken though it would change the nutritional values."

Step by Step Method

Step 1

DO AT HOME - pack the chicken, vegetables and noodles in a medium glass heatproof container with a lid and put the taco powder in a separate small container.

Step 2

DO AT WORK - pour enough boiling water over the chicken mixture to cover and set aside for 4 minutes and then drain MOST of the water away and add the taco powder and stir to combine.

DH and I differed in opinion with this recipe. I really, quite enjoyed this recipe and the flavour although DH did not like this at all. He said it did not have much flavour. I think he may have used too much water. I used a thin egg noodle but I think ramen or udon would suit this recipe better, as the egg noodle did not soften too much at all. I think it was the seasoning he didn't like, so I am going to try to find a different seasoning. I even think a cup of soup ~ type mix might really be nice in this recipe. I am going to try a few different types and see how it goes for the DH. This is so easy to prepare and make at work next day, and healthy as well!
