"I found this recipe in "Better homes and Gardens". I am always looking to use up chicken meat for my DH, and I think I may have found the answer in the recipe. I probably wont make as dainty as these looked, as it would be a waste of time for just him, but I am sure he will like this on a man sized sanger!"

Step 1
Place the finely chopped chicken and cashews in a medium bowl & add the mayonnaise; season with salt and pepper to taste. Divide the chicken mix between half the bread slices & spread mix to cover the bread slice. Arrange cucumber slices on top, slightly overlapping, and sandwich with remaining slices of bread.
Step 2
Use a large serrated knife to trim off crusts & cut each sandwich into 4 small triangles.
Step 3
Put chopped chives in a shallow dish. Brush one of the short cut sides of each sandwich triangle with a little of the extra mayonnaise and press that side into the chives to coat.
Step 4
Arrange sandwich triangles upright on a platter, alternating the sides coated in chives, serve with extra cashews on the side.
