Ingredients

The ingredients are:
  • 280 grams cooked chicken meat (cold roast chicken meat, finely chopped, 2 cups)
  • 40 grams cashew nuts (roasted, salted, finely chopped, 1/4 cup)
  • 75 grams mayonnaise (whole-egg, 1/3 cup )
  • 455 grams white bread (12 slices )
  • 450 grams cucumber (Lebanese cucumbers, very thinly sliced length ways, 3 small )
  • 45 grams cup finely chopped chives (¾ cup, about 3 bunches)
  • 75 grams mayonnaise (whole-egg, to spread bread, extra, 1/3 cup )
  • Seasoning, to taste
  • Cashews, whole (extra to serve)

How to Make

  • Step 1: Place the finely chopped chicken and cashews in a medium bowl & add the mayonnaise; season with salt and pepper to taste. Divide the chicken mix between half the bread slices & spread mix to cover the bread slice. Arrange cucumber slices on top, slightly overlapping, and sandwich with remaining slices of bread.

  • Step 2: Use a large serrated knife to trim off crusts & cut each sandwich into 4 small triangles.

  • Step 3: Put chopped chives in a shallow dish. Brush one of the short cut sides of each sandwich triangle with a little of the extra mayonnaise and press that side into the chives to coat.

  • Step 4: Arrange sandwich triangles upright on a platter, alternating the sides coated in chives, serve with extra cashews on the side.
