Step by Step Method

Step 1

Grease a 9-inch baking dish.

Step 2

Season the thighs with salt and pepper. Brown the skin side only in hot butter or oil. Place the browned thighs in baking dish (skin side up).

Step 3

In a saucepan, combine brown sugar, pineapple with the juice, honey, garlic salt or powder, ginger and pepper.

Step 4

In a small bowl mix the soy sauce with cornstarch until smooth; add to the pineapple mixture. Cook and stir over medium-low heat until thickened, about 3 minutes.

Step 5

Pour over the chicken.

Step 6

Bake, uncovered in 350° (preheated oven) for 35-45 minutes or until the chicken is totally cooked.

The only bad thing about this recipe is I want to eat it at least once a week and I would get complaints about that. I used boneless/skinless breasts, but otherwise followed exactly, and this is AMAZING! I served brown rice on the side and spooned some of the sauce over top, and I couldn't be happier. Even my picky mother said it was good, which coming from her is high praise. Thank you!

Wow this is darn good tasting chicken, easy enough for a guy to throw together, the sauce has a good flavor and goes great with rice. Great recipe which means I'll be making it over again! TY Katia
