Ingredients

The ingredients are:
  • 2 to 3 pounds chicken thighs (6-8 thighs, or a mix of thighs and drumsticks)
  • Salt & pepper
  • Butter or oil, for browning
  • 1/3 to 1/2 cup brown sugar, packed (if you like it really sweet use 1/2 cup or increase the honey amount)
  • 2 cans (16 ounces) crushed pineapple (undrained, 8 ounce each can)
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 tablespoons cornstarch
  • 1/4 teaspoon garlic salt (or 1 teaspoon garlic powder)
  • 1 teaspoon ground ginger
  • 1/4 teaspoon pepper

How to Make

  • Step 1: Grease a 9-inch baking dish.

  • Step 2: Season the thighs with salt and pepper. Brown the skin side only in hot butter or oil. Place the browned thighs in baking dish (skin side up).

  • Step 3: In a saucepan, combine brown sugar, pineapple with the juice, honey, garlic salt or powder, ginger and pepper.

  • Step 4: In a small bowl mix the soy sauce with cornstarch until smooth; add to the pineapple mixture. Cook and stir over medium-low heat until thickened, about 3 minutes.

  • Step 5: Pour over the chicken.

  • Step 6: Bake, uncovered in 350° (preheated oven) for 35-45 minutes or until the chicken is totally cooked.
