Step by Step Method

Step 1

Preheat oven to 350°F.

Step 2

Combine sugar, salt, sage and pepper; rub mixture onto both sides of pork chops. Coat chops well with flour.

Step 3

Heat a large heavy skillet, add oil and butter.

Step 4

Sauté pork chops until browned on both sides; remove from skillet and set into a baking dish.

Step 5

Add onion, sauté until just tender adding garlic and mushrooms after first 5 minutes.

Step 6

Sauté 10 minutes until softened.

Step 7

Add chicken stock, tomato paste, Worcestershire,corn starch and heavy cream to pan, bring to simmer.

Step 8

Pour over pork chops, Cover and bake 1 hour, or until very tender.

This goes straight into my Best of 2021 file! Delish!! That sauce is sooooooo flavorful!!! (Note to future self making this again - go light on the tomato paste and Worchestershire for us). The pork chops were cooked perfectly and that luscious sauce was so good with them. I'm super glad I decided to make mashed potatoes because we were in comfort food heaven. Thank you!

Daily Inspiration

Loved these pork chops and the sauce was wonderful. I chose to brown the chops in the skillet, removed them, and simmer the sauce until thick. I returned the chops to the sauce and allowed them to cook on top of the stove on medium low. They turned out perfectly. : )

I have to agree with all of the other reviewers so far.....this dish is delicious. The sauce is wonderful and puts it over the top. I made this for Best of 2019 tag, recommended by Mikekey. It's going into my Best of cookbook too. Thanks for sharing, Dee.

I made this based on Mikekey's recommendation and he's not lying that this is a 10 star recipe...the sauce is amazingly delicious...the pork came out so tender...made for the "Best of 2019"...it's going on my "Best of 2020" list...

10 Stars! This is really delicious and worth the effort. The sauce is wonderful and the sugar and flour coating gives a nice “crust” on the chops. The sauce would be great on chicken breast also.
