"Looking at vegetarian dishes that are comfort food and have a bit of a naughty side to them be it a dish I would only indulge in occasionally because it is rather rich or just plain decadent. Have changed some of the ingredients to suit what we have available to us. NOTE you need to allow 1.5 to 2 hours proving time."

Step by Step Method

Step 1

Whisk the yeast into 300 ml of lukewarm water, leave for 2 minutes, then pour into a large bowl with 500 grams of the flour and a really good pinch of sea salt and mix up as best you can, then knead vigorously on a flour-dusted surface to give you a smooth, elastic dough and rub lightly with oil, place in the bowl, cover with a clean damp tea towel and prove for 1 hour in a warm place, or until doubled in size.

Step 2

Meanwhile, peel and finely slice the onion and place in a pan with the butter, bay leaves and a splash of water and fry on a medium heat for 10 minutes, stirring regularly, then stir in 50g of flour, followed by the mustard, and slowly add the milk to give you a loose white sauce, then roughly break up the cauliflower, discarding just the tatty outer leaves, and finely slice the stalk and add to the pan with any remaining leaves and simmer gently for 30 minutes, stirring occasionally, then turn off the heat, grate in the cheese, season to perfection and allow to cool a little.

Step 3

Preheat the oven to full whack (240ºC/475ºF).

Step 4

Lightly oil a 30cm non-stick ovenproof frying pan or a 25cm x 35cm baking tray, then press out the dough to fill the space and spoon over the cauliflower mixture, leaving a 2cm border around the edge, then leave to prove again until doubled in size and bake at the bottom of the oven for 25 minutes, or until golden, crisp and melty.

Step 5

Delicious served with a bowl of lemony dressed seasonal salad leaves.

Step 6

ALTERNATIVE - Mix up the cheeses you choose – also incredible made with broccoli instead of, or as well as, the cauliflower.

Love this version of deep dish pizza pie. It is more like a bread pie than a pizza (sans tomato sauce) with lovely cauliflower flavor permeating through the creamy cheese sauce. I did change it up just a tad - over the stove top, I quickly "grilled" the cauliflower in a cast iron grill pan before further cooking it in the cheese sauce, making sure that it didn't overcook. Did this to add a bit of a smoky profile to the cauliflower. However, I did mistakenly over baked it a bit while in the oven - forgot to put on the timer. But it still came out lovely. We had it alongside a bowl of soup and it was a delight. Thank you, Pat, for sharing. Made it for FYC.
