Step by Step Method

Step 1

In a small skillet, over medium heat, saute the chopped red bell peppers in the extra virgin olive oil and butter for 3 minutes.

Meanwhile, drain the canned crushed pineapple.

Mix all the ingredients in a bowl; grated cheese, pineapple, sautéed red peppers and mayonnaise.

Daily Inspiration

Made this yummy pimento cheese to go with some crackers. I really liked the addition of the crushed pineapple. I used jarred roasted red bell peppers vs. fresh ones and other than that -- I added some salt & pepper to taste. Nice appetizer and would work great at a party of family gathering.
