Step by Step Method
Step 1
Melt butter in a large nonstick skillet and set aside to cool slightly.
Step 2
In a medium mixing bowl, beat the eggs. Beat in the milk.
Step 3
Add the cornmeal, flour, sugar, baking powder and salt. Mix until just combined. Add corn, cheese and melted butter from skillet and mix just until combined.
Step 4
Heat the same skillet over medium heat until hot.
Step 5
Drop batter by 1/4 cupfuls onto the hot skillet and cook until golden brown, about 2 minutes per side.
Step 6
Repeat with the remaining batter.
Step 7
Serve hot with syrup
