  • 2 tablespoons butter
  • 2 large eggs
  • 3/4 cup milk
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 tablespoon granulated sugar (white)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 can (8.75 ounce) whole kernel corn (drained)
  • 1/2 cup shredded cheddar cheese

How to Make

  • Step 1: Melt butter in a large nonstick skillet and set aside to cool slightly.

  • Step 2: In a medium mixing bowl, beat the eggs. Beat in the milk.

  • Step 3: Add the cornmeal, flour, sugar, baking powder and salt. Mix until just combined. Add corn, cheese and melted butter from skillet and mix just until combined.

  • Step 4: Heat the same skillet over medium heat until hot.

  • Step 5: Drop batter by 1/4 cupfuls onto the hot skillet and cook until golden brown, about 2 minutes per side.

  • Step 6: Repeat with the remaining batter.

  • Step 7: Serve hot with syrup
