Step by Step Method

Step 1

Soak noodles in very hot tap water (cook noodles if you use rice vermicelli or flat rice noodles)

Step 2

While noodles are soaking, cut chicken into thin julienne strips.

Step 3

Heat oil in deep skillet over medium-high heat; add chicken; garlic, ginger, and pepper flakes.

Step 4

Cook, stirring for 1 minute; then add broth and fish sauce and bring to a boil.

Step 5

Reduce heat to medium and simmer until chicken is done, about 8 minutes.

Step 6

Drain noodles and cut into short pieces, about 1-1 1/2 inches long.

Step 7

Arrange noodles in bottom of bowls; ladle soup over the top and sprinkle with cilantro, onion, and basil.

Tips


  • Common table condiments for this are sriracha, sambal, and/or hoisin sauce.
  • Serve with a lime wedge if you like.

Delightful soup! I did add grated carrot and a handful of peas and used soy sauce for the fish sauce. Like the fast and easy soups on busy days and this sure fits the bill. Thank you for sharing your keeper recipe Sue! Made for Billboard Recipe Tag.

We really liked this soup even with my substitutions. I added some mushrooms and skipped the fish sauce and cilantro. I also used soba noodles for the noodles. Delicious! Thanks for sharing!

LOVE this soup! We have been enjoying some wonderful lunches in the city, your recipe is so like the wonderful soup served at one of our favourite little Vietnamese restaurants. Made with lower carbs in mind I cooked Shirataki fettuchini noodles according to instructions, they worked beautifully! Made for a lovely lunch this past Sunday. I was out of basil but no matter it was perfect for us. A keeper for sure and one that will be see to many many repeats!
