Step by Step Method
Step 1
Place half the spring onion in a bowl of iced water and set aside to curl.
Step 2
Place the pork, Chinese five spice and 2 tablespoons of soy sauce in a large bowl and season with pepper, turning the pork to coat and set aside for 5 minutes to develop the flavours.
Step 3
Meanwhile, cook the noodles in a large saucepan of boiling water for 5 minutes or until tender and then drain well.
Step 4
Preheat a chargrill on medium-high and cook pork for 3 minutes each side or until just cooked through and transfer to a plate and set aside, covered, for 5 minutes to rest.
Step 5
While pork is cooking, heat a wok or frying pan over high heat and add bacon and stir-fry for 2 minutes or until golden brown and then transfer to a plate, now add half the oil to wok and swirl to coat and pour in egg and swirl to make a thin omelette and cook for 1-2 minutes or until golden underneath and just set on top and transfer to a clean work surface and roll into a log and thinly slice crossways.
Step 6
Heat remaining oil in wok and return the bacon to the wok with carrot, snow peas, omelette, noodles, and remaining soy sauce and spring onion and stir-fry for 2 minutes or until heated through.
Step 7
Divide the noodle mixture among serving plates and top with the pork and sprinkle with the spring onion curls and coriander leaves and serve.
