" Celery root looks very ugly but the flavor is wonderful. If you haven't tried it do - you will be pleasantly surprised. It tastes like celery but perhaps a bit more mellow. It is great as a vegetable as well as a salad. When you peel the root you have to cut quite deep to get all of the skin off. Lite sour cream works in this recipe. If you do not have a food processor dice the cleric and cook a bit more than 5 minutes you want it tender but not mushy."

Step by Step Method
Step 1
Peel your celeric and julienne, use your food processor.
Step 2
Place the julieened celeric in boiling water and boil for 5 minutes, drain well
Step 3
Place cold celeric and cucumbers in a bowl
Step 4
Mix remaining ingredients except sour cream lettuce and pepper strips.
Step 5
Start off slow adding the sour cream, stirring gently adding as you go until you have the consistency that you like. You may add a bit more or a bit less.
Step 6
Chill well
Step 7
Place the salad on Lettiuce leaves and decorate with the red and green pepper strips
