Step by Step Method

Step 1

Combine tomatoes, onions, garlic, salt and pepper in a bowl and mix well.

Step 2

Add pork chops and stir well.

Step 3

Cover and set aside for 1 hour.

Step 4

Remove pork from bowl and set vegetables aside.

Step 5

Heat oil in a large skillet until it begins to smoke.

Step 6

Add pork and cook over high heat 5 minutes without stirring.

Step 7

Stir and cook 5 minutes, stirring occasionally.

Step 8

Combine water and reserved vegetables.

Step 9

Add slowly to pork, stirring constantly.

Step 10

Cover, reduce heat to low, and cook for 45 minutes.

This is an outstanding recipe, worthy of more than 5 stars! It is amazing how the pork becomes so delicious when combined with simple flavorings of olive oil, onion, tomato, garlic, salt and pepper. This was made - and will be made again - in honor of ChocolatII.
