Ingredients

The ingredients are:
  • 24 ounces tomatoes, chopped (4 whole tomatoes)
  • 24 ounces yellow onions, chopped (3 onions)
  • 2 garlic cloves, minced
  • 2 teaspoons salt (to taste)
  • 1/2 teaspoon pepper (to taste)
  • 4 pounds boneless pork loin (cut into strips 1/2" x 1/2" x 2")
  • 3/4 cup olive oil
  • 3/4 cup water

How to Make

  • Step 1: Combine tomatoes, onions, garlic, salt and pepper in a bowl and mix well.

  • Step 2: Add pork chops and stir well.

  • Step 3: Cover and set aside for 1 hour.

  • Step 4: Remove pork from bowl and set vegetables aside.

  • Step 5: Heat oil in a large skillet until it begins to smoke.

  • Step 6: Add pork and cook over high heat 5 minutes without stirring.

  • Step 7: Stir and cook 5 minutes, stirring occasionally.

  • Step 8: Combine water and reserved vegetables.

  • Step 9: Add slowly to pork, stirring constantly.

  • Step 10: Cover, reduce heat to low, and cook for 45 minutes.
